Happy Thanksgiving


Happy Canadian Thanksgiving Everyone!



We're hoping to go explore a corn maze today with the in laws who are visiting from the UK as long as the weather allows. The Autumn leaves are quite lovely right now though the temperatures are dropping.  It's to be expected this time of year obviously but last year at this weekend I wore shorts so you never really know.

Slow Cooker Lasagna with Amanda

Happy Not-Friday once again.  Good luck to those Americans getting back to work after the Fourth of July yesterday.  To those who somehow managed to roll that into a crazily extended weekend... the rest of us hate you... Ok ok I kid. He's not doing any of that. But he is a walking talking crazy kiddo who we adore with our whole heart. 

I want to Thank Leigh Ellen for letting me have the opportunity to blog today about one of my favorite things to eat. When I know i'm going to be busy all day and I want something yummy to eat for dinner I throw together a Crock Pot Lasagna . It's super simple! 
(Source - I forgot to take a picture last time I made it!)

Here's the recipe: 
1lb Ground Turkey/Beef/Pork (Whichever you prefer)
1 tsp. Italian seasoning 

1 jar Spaghetti sauce 
1/3 cup water 
UNCOOKED lasagna noodles 
1 cartion ricotta cheese
2 cups shredded mozzerella cheese 

Brown meat and seasoning, drain
Mix spaghetti sauce and water. (Water cooks the noodles in crock pot) 
Layer like you would a regular lasagna in a GREASED crock pot ( I always put a little sauce on bottom and then do noodles sauce meat cheese) 
Cover, cook on high for 1 hour 
Reduce heat to low and cook on low for 4-5 hours.

I promise - you will love it!

Trotting About Toronto

I'm off enjoying Orlando but I thought today I'd share with you some of the details of my day in Toronto.  I went to a puppet show and ate supper with my hands.

Mum and I went to see the stage production of Warhorse.  She and I agreed we wouldn't describe it as a musical.  In fact, as with when I saw the movie, the humans kind of annoyed us.  The animal puppets on the other hand were fabulous.  You're not allowed to take photos during the production obviously but here's me with some stills from the show.




After the show Mum and I met up with a good friend from high school (my high school... not Mum's high school).  She'd suggested a place called Ethiopian House (among other options) and I thought that sounded like a great idea.  Mum was game to eat dinner with her hands.. mostly.



Once the food arrived it was so tasty that eating with your hands (well technically just supposed to use right hand, break off the bread and use it to scoop everything up) made complete sense.  Of course that also gave us an excuse to talk with our mouths full while we caught up.


So much tastier than the photo makes it look. Their vegetarian one of everything.
Jen was a very good friend of mine in grade 9 and 10.  Then I moved to New Brunswick.  It was the late 90s before social media kicked in (no such thing as wireless) so my friends and I wrote a lot of letters.  Not sure Mum ever realised how many.  Jen brought me the letters I'd written her during that time so I could read through what my 16/17/18 year old self had thought to share.  Mum was a little shocked that those were just the Jen letters!

Dining Out

Thanks to some illness around our house the long weekend didn't turn out exactly as we'd planned.  We were meant to spend the entire day Sunday on the coast in St. Andrews with the parents.  That proved to be too much but we did join them for supper at the Rossmount Inn to celebrate Dad's birthday.

Some of the delicious dishes that made their way to the table.  By the time we got to dessert we were too full... to bother taking photos.... we most certainly ordered dessert!

Back to regular life this week. I'm back to work and Husband starts a new round of courses after having last week off.

Thai Travel- Guest Post by Paige of Artsy Anthropology

I love to travel and regularly share photos from my travels on the blog so it's exciting to have a guest blogger today sharing her travels to a place I've never been... Thailand.  You may have noticed this isn't a cooking blog so it's extra exciting to have Paige sharing one of her recipes today as well.  Everyone give a big welcome to Paige. 

Hello, my name is Paige, over at Artsy Anthropology!  I am so excited to get to guest-post over here today!  I am going to share some of my pictures from my trip to Thailand a few years ago (my undergraduate graduation trip), it was beautiful!  If you keep reading, there's a delicious, easy "Thai" dish below!

First off, I have to say that I have traveled a lot, and Thailand has some of the most beautiful beaches and oceans in the world! Check out this view, remember that giant, devastating tsunami that impacted the island's off of Thailand's mainland... this island was the worst hit, and it is still just absolutely beautiful.


Aren't these boats just too cute?! They are like a water taxi, you take them any time you travel off of the islands.

Pretty much what all of the bungalows are like... they are about 30.00 (USD) a night, and they are awesome. They usually have their own bathroom and shower... and for a little more money, air conditioning.

There was a lot of time riding the train (which from one end of Thailand to the other is about $8.00... if you ride in standard class). There was a lot of train riding, bus riding and ferry riding - it was a different locations nearly every night for 14 days, but that's the way to go because we saw almost every island.



I love Thai food, the flavors are just so yummy! Some of them are hard to reproduce at home, but not the peanut-chicken - love it!

This recipe is quick, easy, filling and makes enough for left overs!

What you need:
2 tablespoons soy sauce
2 tablespoons water
1 tablespoon peanut butter (I like crunchy)
1 table spoon honey
Juice of 1 lime (not completely necessary)
1 tablespoon of minced garlic (looks like a nubby root, found with veggies at store like cucumbers)
2 cloves minced garlic
1/2 to 1 tablespoon red garlic pepper flakes (depends on how spicy you want it)
1 tablespoon vegetable oil
4 boneless chicken breasts (about 1 pound) - cut into about 1 inch pieces
Snow peas, broccoli, zucchini, water chestnuts (all go well in this)

Linguine or spaghetti noodles


What you do:
1. Cut chicken into cubes and put into a deep frying pan you've preheated some olive oil in.
2. Bring a pot of water to a boil. Add noodles.
3. Make the sauce by combining all the ingredients in a microwave safe bowl and microwaving for about 30 seconds, this will melt the peanut butter enough to mix everything together.
4. Once the chicken is almost cooked, add your veggies for a few minutes. Add the sauce as well so that the veggies and chicken can get evenly coated.
5. Once the noodles are all done, mix everything together and serve.

Easter Weekend Moments

I spent most of last week sick in bed and sick on couch and dragging myself between the two.  I felt improved on the weekend though Easter Sunday saw me winding up with a horrible sinus headache, eye ache, ear ache.  There weren't enough painkillers in the house to deal with that one.  I managed to enjoy the Church service and Sunday Brunch before it got really bad.  I'm positive there's a way to blame it on the snow.  Oh yes... the East Coast of Canada had a snow storm on Sunday.  Made me glad I didn't wash the car on Saturday.



So much attention on a long weekend.

Hope most of you still have the day off today. I do. I'm taking Sadie to the groomer while Husband goes off to do group work (he's a full time student right now). Hoping not so many pain killers needed today.
